Groat is the broken wheat. In Greece wheat (and its products) are among the most consumed cereals, while Hippocrates was the first to find its beneficial properties.
Groat is in principle a cereal rich in fiber which is known to play an important role in maintaining the right body weight and in the proper functioning of the intestine. It is also rich in manganese, which helps to maintain good bone. Contains B and E complex vitamins that help keep your heart functioning properly, and three times as much potassium and four times as phosphorus, compared to spaghetti and white rice.
Finally it has a low glycemic index and this can be considered an excellent nutritional option for diabetics.
Despite its benefits, it is a cereal not commonly used in the kitchen. You can, however, use it as raw - after soaking it - mainly in salads, while it can in certain recipes replace rice in cooked foods.
